This is one of the best "cha chaan teng" dishes that I've had the pleasure of trying in Wuhan. The pork was perfectly crispy on the outside but super tender and flavourful on the inside, and the scallion oil was the icing on the cake. And then there was an additional slice of SPAM (yummmmmmmmmmm) as the cherry on top, making this an overall epic plate of delicacy.
