You can start with the basic butter, flour, salt, pepper, nutmeg, and milk. This gives you a great bechamel that you can use for fish, vegetables, and even chicken. What makes it a mother sauce is you can add other things and change it greatly. Cheese is probably the most common, it how you make most mac and cheese recipes. You can go crazy with what you add and make great sauces that have multiple uses. Garlic, garlic, onion powder, onions, tarragon, chilli powder, italian seasoning mushrooms, just about any spice and even anchovies and capers. Over the years I have used just about everything I could think of. Bechamel is a simple sauce to make and tastes great by itself but even better when you play with it. Marinara sauce is another simple sauce that I think is great, but is it a mother sauce. I think yes, starting with the standard marinara you can then start adding things. Add cooked ground beef, pork, or chicken and you have a meat sauce. You can add cooked vegetables, mushrooms, shrimp, lobster, any cooked fish, sliced steak what ever you like. So for me that makes it a mother sauce. Today I cooked some onions, celery, garlic and reconstituted porcini mushrooms.
