Hey Everyone!
Let's talk blueberry muffins. Blueberry muffins are so easy to make and are great for breakfast time. My kids love muffins so whipping up some muffins are always a winner. Blueberries are also healthy and contain plenty of benefits including:
- antioxidants (top fruit)
- low in calories
- may help lower blood pressure
I usually keep frozen blueberries on hand for our smoothies, but they also come in handy for muffins. You can use fresh blueberries of course.
Instructions/Ingredients:
- 2 cups self rising flour
- 1 1/4 cup soy milk + 1 tsp apple cider vinegar (buttermilk)
- 1 tsp vanilla extract
- 1/3 cup applesauce
- 1/3 cup canola oil
- 1 1/2 cup frozen blueberries
- Set oven to 400 degrees.
- Pour milk in a bowl and add the vinegar and set to side.
- In a large bowl, pour flour in a bowl.
- Next add in all the liquid ingredients (milk mixture, oil, applesauce and vanilla)
- Once mixed and combined, fold in blueberries.
All ingredients that I used are pictured above. I did not add any additional sugar. I usually do that when I make muffins. I added applesauce so you can omit the oil in this recipe, but I think they turned out fine.
I used a whisk to mix the wet ingredients into the flour.
Fold berries into the better and it should look something like this.
Bake at 400 degrees for 25 minutes. Take out and enjoy! Serve for breakfast or even a snack.
