Hello everybody. Todays my lunch is delivery "Okinawa Soba" ( 沖縄そば ) of Kinjo ( 金城. きんじょう ) at PhraKhanong Bangkok. "Okinawa Soba (Okinawa noodle and soup)" is the most common menu in any eateries in Okinawa Japan. You will be surprised to found more of Okinawa Soba restaurant than Ramen restaurant in Okinawa. The soup is a combination of pork and bonito broth, salted and soy sauce, and has a very gentle taste. It is transparent and golden in color, and it has a relieving taste every time you drink it. The umami is condensed. The noodles are straight flat noodles made from 100% wheat flour. The smooth texture goes well with the soup. The toppings are Soki (simmered pork belly in sugar and soy sauce), kamaboko, red pickled ginger, and green onions. It's very delicious. Thank you.
