The layered and thick braising sauce was the key to the duck rice, delivering a bittersweet 苦甘甜 umami. The duck was tender chewy, the tau kwa and peanuts soft, and egg flavourful. The soup was really nice, having the same herbal bitter sweetness but lighter and less savoury than the braising sauce - I drank the entire bowl.
