Do you love a good Asian Chicken Salad as much as I do? If you do, you know it needs a delicious dressing to really bring it together. My Orange Ginger Vinaigrette is just the ticket. It bring the ginger and soy sauce into the Orange and chicken combo of a traditional Asian Chicken salad. Most recipes call for mandarin oranges, carrots, and bell peppers into the mix.
You could totally use this vinaigrette in more than just salad. It would be so good in stir-fry, chicken lettuce wraps, for dipping with potstickers... the list goes on. It is a simple dressing but so full of excellent flavors. The real key to making it a really combined flavor profiles is using a mason jar. When you put the lid on the jar after all the ingredients, you can shake the ever-loving junk out of it and really get it mixed up.
I served this over an Asian Chicken salad. It included spring mix, butter lettuce, carrots, red bell peppers, almonds, crunchy ramen, cucumbers, rotisserie chicken, and mandarin oranges. I like to add in the broken up ramen bricks for crunch, but also because it is familiar to the kids to encourage eating. They all loved this salad and wanted seconds. As I mentioned, we having a full kitchen remodel, so please excuse the Dixie Plates!
