I remember my mom making Scalloped Potatoes with Ham back when I was a very little girl. For some reason, she stopped making it at some point, so I don't have a recipe for it. There was still some leftover Christmas ham in the freezer, so I decided to try and re-create it myself. I don't think I really got very close to mom's recipe, but it sure was delicious! I highly suggest trying this recipe with your leftover Easter ham, or maybe even having this for your Easter dinner.
Here is the recipe as I made it:
Scalloped Potatoes and Ham
Slice into thin slices:
4-6 medium potatoes, depending on the size of your casserole dish
Arrange in layers in greased casserole dish.
Add over top of the potatoes:
1-2 cups of leftover ham, cut into 1/2" cubes
Melt in a large pan:
2 Tablespoons butter
Add and saute until soft:
1/2 of a small onion, sliced
1 clove garlic, minced
Stir in:
2 Tablespoons flour
Let cook for a couple of minutes.
Whisk in a bit at a time:
2 cups milk
Keep whisking until mixture thickens.
Bring to a boil and season with salt and pepper.
Pour the mixture over top of potatoes and ham.
Bake at 350 degrees for 45-60 minutes, or until the potatoes are tender.

I used a knife to slice the potatoes, but if you have one, a mandoline work well for this. The slices should be abut 1/8" thick.

Any ham would be good in this, but I still had leftover Christmas ham in our freezer.

I really loaded this up with the ham.

If you like a lot of sauce, you could double it, but my casserole was fairly small and this amount was perfect.

The sauce goes on and it's ready for the oven.

Oh yum. A bit of shredded cheese might also be nice melted on top!

I had to serve this with the obligatory green vegetable - peas.

Come to think of it - this dish is perfect for springtime - ham, potatoes, and peas!

I tried. I really tried, but sometimes you just can't recreate mom's recipe. This was really, really good, but just wasn't exactly like when mom used to make it. I still highly recommend this one. If you have ham left after your Easter or springtime dinner, you might want to keep some to try this recipe.
