I first made a vegan potato pizza one day when I didn't know what to eat and tried to use up my leftovers. All I had was some potatoes, a pack of pizza dough and vegan cheese leftovers. It was a really lucky coincidence that it just so happens that it is all you need to make a super tasty vegan potato pizza. Since then, I have tried making a vegan potato pizza multiple times and I believe I have found out how to make the easiest, tastiest vegan potato pizza that is also budget-friendly.

I find potato pizza to be perfect for the winter months and unlike regular vegan tomato pizza, this one is almost impossible to get wrong. I love a satisfying meal that takes almost no time to make while satisfying your cravings easily and this pizza does just that. Now, there are actually two different ways to make this pizza and you will get a slightly different result - you can make it with or without vegan cheese - both ways work.

To save up time I often prefer buying ready made pizza dough, however if you decide to make your own dough keep in mind that the time to make this pizza will increase with around an hour.

The best thing about this potato pizza is that it ends up being a very light meal and unlike tomato pizza, it is pretty great eaten cold so you can easily pack it into your lunch or eat it the day after.

Vegan Potato Pizza

Easy and budget-friendly vegan potato pizza perfect for the cold winter months. Great way to use up those leftover potatoes.

  • 1 large potato (or 2 medium)
  • olive oil (or another oil you like)
  • 1 pack pizza dough ((400g or 14oz))
  • dried rosemary
  • 1 tbsp garlic powder (or 2 cloves garlic)
  • salt (to taste)
  • 1 pack grated vegan cheese (optional)
  1. If you are using store bought pastry dough you can skip this step - if not, you can make your own pizza dough as described below.

  2. If you are using cheese - start by covering your pizza dough with vegan cheese. If not, skip this step (the pizza tastes good also without the vegan cheese, but it definitely gives it a kick).

  3. Use a potato peeler to peel thin slices of your potato - alternatively you can also cut up your potato into thin slices. Remember - if your potato slices are too thick they may not bake properly.

  4. Put some oil in a bowl, add some salt, garlic powder (or your garlic cloves) and roll your potato slices into the mix.

  5. Line up the potatoes on top of your cheese to cover the pizza completely.

  6. Finish by sprinkling a bit of rosemary on top of the potatoes.

  7. Bake at 200 °C (390 °F) regular oven, for 15 minutes (check below for alternative time if you are making your own pizza dough).

  8. Enjoy!

  • This vegan potato pizza tastes amazing without vegan cheese - the cheese just gives a bit extra to it.
  • Add any spices to the potatoes you like - I tried smoked paprika and liked it a lot. 
  • You can add additional veggies you like but the pizza tastes great with potato only as well.

Vegan Pizza Dough

An easy vegan pizza dough that anyone can make.

  • 1 cube yeast (1½ to 2 teaspoons instant yeast, or 2 to 2¼ teaspoons active dry yeast)
  • 500 ml water (almost 2 and a half US cups)
  • 500 g graham flour
  • 150 g all purpose flour
  • 1 tsp sugar
  • 1 tsp salt
  • 2-3 tbsp oil of choice (I used olive oil)
  1. Start by proofing your yeast first. If you are new to making bread or dough, check out this guide. Basically what you need to do is put the yeast in the warm water (500ml), then add the sugar, salt and oil. I recommend waiting around 10 minutes before continuing to make sure your yeast is activating. You should be able to see a layer similar to this forming on top.

  2. In another bowl, mix your flours together and slowly start adding the yeast to the mixture, stirring continuously to form a dough.

  3. Use your hands and get in there and really shape a nice ball of dough - if your mix is too wet and sticking too much to your hands, add a little bit of extra all purpose flour, but be careful not to overdo it.

  4. Cover with a cloth and wait for the dough to double in size for around 50 minutes.

  5. When it has doubled in size, you can separate it into 2 chunks out of which you can roll out your dough on top of some baking paper. Feel free to put a bit of flour on the paper to make sure that it does not stick too much as you roll it out.

  6. You can roll your dough out as thin as you want or as thick - it does not expand much after baking.

What is the best vegan cheese to use for this recipe?

You can use any type of vegan cheese you like. However, I would suggest something like vegan cheddar. I used Grate me Vegan Cheese by Naturli which is one of my favorite to use on pizza.
