Crazy Debbie has really been getting into cooking with lots of vegetables lately and could probably run a cracking soup kitchen because this recipe is for an awesome potato and leek soup!
3 turkey stock cubes
1 beef stock cube
4 potatoes
4 carrots
2 leeks
3 sweet peppers
A bunch of spring onions
Bacon lardons
Tomato puree
Black pepper
Smoked paprika
Sage
Rosemary
Ground ginger
Parsley
Oregano
Hot smoked paprika
Minced garlic
Celery salt
Bay leaves
Basil
Chilli flakes
Tarragon
Thyme
Method:
Start by peeling your potatoes and carrots, then dice them. Core your sweet peppers and cut them into strips. Finally, chop your leeks and spring onions.
Next we make the stock - around 1 litre of water per stock cube and simply stir until the stock cubes dissolve. I'm using a large soup pot on a medium heat for this.
Now we "fuck everything into the pot" - crazy Debbie's exact words. Add all the veg then cover and simmer for around an hour
After an hour we add 200g of bacon lardons and 2 wooden spoons of tomato puree and stir through. Cover for an additional 30 minutes.
Now we're ready to add some herbs and spices. Into the pot goes:
4 Bay leaves
A moderate amount of parsley
A sprinkle of black pepper
A sprinkle of Celery salt
A sprinkle of ginger
A sprinkle of hot smoked paprika
A sprinkle of chilli flakes
A moderate amount of sage
A moderate amount of thyme
A sprinkle of Tarragon
A moderate amount of oregano
A moderate amount of Basil
A sprinkle of rosemary
A moderate amount of Minced garlic
Give it a good ol stir and cover for a final 20 minutes before serving.
