A Ukrainian cuisine made with beef stew meat that is mouthwatering and fork tender. Chopped carrots with diced onion and cubed potatoes cooked into a seasoned tomato-based sauce that is made completely on top of the stove.
Heat oil in a large pot over medium heat. Add the beef stew cubes and cook until the meat is browned on all sides.
Chop the onion, peel and dice the carrot then add to the beef.
Salt and pepper to taste. Cook until the vegetables are tender, stirring frequently.
In a small bowl, whisk together the 4 cups of warm water, tomato paste and Better Than Bouillon.
Pour the liquid into the beef and add the bay leaves. Bring to a simmer, cover and cook for 45 minutes or until the beef it very tender. Stir occasionally.
Peel and dice the potatoes then add them to the pot along with 1 cup of water (if needed).
Bring to a simmer, cover and cook for 30 minutes or until potatoes are tender then serve.
