Instant Appe made with rava and some tempering, is an ideal recipe for breakfast. That you can make instantly with ease. For this recipe you need not to soak rice, dal before hand and then ferment to prepare the batter. It is a very popular South Indian recipe that is cooked in a specific pan, called Appe Pan or Paniyaram Pan. In this recipe the batter can be prepared in 20-25 minutes. Here goes the recipe...
Ingredients for preparing Appe:
- Rava or Sooji or Semolina – 1 cup
- Curd or Yogurt – ½ cup
- Rice Flour – 2 tsp
- Baking Soda – ½ tsp
- Baking Powder – ¼ tsp
- Salt – To taste
- Black Mustard Seeds – ½ tsp
- Cumin Seeds – ½ tsp
- Curry Leaves – 1 sprig
- Onion – 1 (Big – finely chopped)
- Green Chilli – 2 tsp or as per taste
- Oil – 2 tsp + preparing Appe
Ingredients for preparing Peanut-Coconut Chutney:
- Grated Coconut – ½ cup
- Roasted Peanut – ¼ cup
- Dry Whole Chilli – 2
- Curry Leaves – 1 sprig
- Black Mustard Seeds – ½ tsp
- Green Chilli – 2 nos
- Garlic – 2 clove
- Oil – 2 tsp
Steps:
- Take semolina and rice flour in a bowl. Add curd and salt. Mix everything well now add ½ cup water. Mix everything again. Cover and rest for 10-15 minutes.
- Heat 2 tsp oil in a pan. Temper the oil with mustard seeds and cumin seeds. When mustard seeds start to crackle, add chopped onion, chopped green chilli and chopped curry leaves. Sauté till onion turns translucent. Add a little salt. Remove from heat and let it cool down completely.
- After it cools down, add it in the semolina-curd mix. Add baking powder and baking soda. Mix once again.
- Heat Appe pan. Grease with little oil. Now put the batter spoon by spoon in each cavity. Cover and let them cook from one side. Put the heat on medium low.
- After 5 minutes remove the cover and turn the appes one by one with spoon. Apply little oil on each with help of brush. Cover and cook for another 3-4 minutes.
- Take out in a plate and serve with coconut or tomato chutney.
- For preparing peanut-coconut chutney, grind peanut, coconut and garlic in a grinder adding a little salt.
- Take out in a bowl. Heat oil in a tadka pan. Add mustard seeds, dry red chilli and curry leaves. Put this tempering on chutney. Serve it with Appe or any other South Indian dishes.
