I found this recipe for Ham Pasta Salad in my mom's recipe file. I don't remember her ever making this one, but she must have enjoyed it somewhere and asked for the recipe. My mom loved summertime, because she LOVED the sun - not the clouds - and she LOVED picnics. Maybe that's why she asked for this recipe - you can never have too many new picnic recipes!
You just won't find an easier or simpler recipe to get you out and running off to the last picnics of the season. Summer just seems to be flying by, and before you know it, winter will be upon us. Ugh. Let's just forget about that and get out there and enjoy the warm sunshine while we can! This salad will definitely help you get out the door and outside faster!
Here is the recipe as I made it:
Ham Pasta Salad
Mix together:
1 7-ounce package of cooked and drained shell macaroni (I used elbow macaroni)
2 cups cubed, fully cooked ham
1 cup green pepper, chopped
1 cup tomato, chopped
1/4 cup onion, chopped
Mix together for Dressing:
1/2 cup mayonnaise
1/4 cup parmesan cheese
2 Tablespoons milk
1/4 teaspoon salt
Mix dressing with other ingredient mixture and top with additional parmesan cheese.
Chill.
I mixed up the dressing ingredients first and had it ready to go.
This is a very simple and easy recipe using very simple ingredients.
All of the ham and veggies are mixed and ready for the dressing.
It's ALL mixed together and ready for a picnic!
This salad is pretty, it's easy to throw together, and it's perfect for the last picnics or get-togethers of the season.
Let's just pretend summer's not over yet!
Oh well, I suppose summer has to end eventually, but they sure seem to be going faster and faster.
