Today's recipe for Caramel Apple Back-to-School Snack Mix isn't really a recipe. It's one of those things that came about when thinking about the fact that it is already time for back-to-school. My oldest daughter is a high school art teacher, and she's about to head back to it. When thinking of a way to support her, I decided a nice, fairly healthy, energy boost of a snack would maybe help. That made me think of apples and that made me think of caramel and cinnamon - and that's where this snack mix came from! 
School has always been important to our family. Grandpa had to leave school after 8th grade to help run the farm for his mother, but he sure did well with that 8th grade education. Grandma used to tell the story of when she was little (I think about 4 years old) she went with her dad to drop the older kids in the family off at school, and that was it - she stayed in school until she graduated because she loved it so much. My mom still saw grade school friends and high school friends her whole life - high school was truly the time of her life she loved the most. I couldn't wait for the first day of school when I was growing up - I loved it. I still have a problem with buying too many school supplies because I love that feeling of a fresh start in the fall. Some of my children will say they loved school and some will not - regardless, all three of them are college graduates and two of them have their Master's degrees!
So now that my daughter is a teacher - and we all know HOW IMPORTANT TEACHERS ARE - this will be a nice little treat to give her to start off the new year!
Here is the recipe as I made it:
Caramel Apple Back-to-School Snack Mix
Mix together gently:
4 cups Apple and Cinnamon Cheerios
2 cups Teddy Grahams
2 cups dried plantains
1 1/2 cups freeze dried apple slices, broken up
1 1/2 cups dried cranberries
1 cup walnuts, coarsely chopped or broken up
1 cup caramel bits
1 cup marshmallow bits

There is no baking required to make this snack mix - just gently combine the delicious ingredients!

This snack mix has some great flavors - caramel, apple, cinnamon, honey, tangy, salty, nutty - yum!

It's a little bit healthy and still a little bit fun.

This will keep your family energized and ready to go - no matter where or when they need a snack.

I gotta say - I love this one!

This makes a great back-to-school after-school snack, but who are we kidding - it makes a great snack for anyone anytime. I sent some of this to work with my husband, too, and he said, "never make this snack mix again - I can't stop eating it - it's a problem"! Ha! What a testimonial!
