This recipe for Strawberry Pizza comes from Grandma's old church cookbook, and it just sounded so good, I knew I had to try to make it. Strawberries, cookie crust, cream cheese, gelatin - this sounds right up my family's alley! I made this when our kids came over for a Sunday dinner, and it was a hit. I think any family would like this one - and you can make most of it ahead of time! There are a few steps to this one, but it's fun to make, so let's get started!
Here is the recipe as I made it:
Strawberry Pizza
Crust:
Spread onto two 9" round tins or one 13-14" pizza pan:
1 package refrigerated cookie dough (I used sugar cookie dough)
Bake according to package instructions and cool.
First Layer:
Whip together:
8 ounces of cream cheese
1 cup sour cream
1 cup powdered sugar
Spread on crust.
Second Layer:
Cut strawberries in half (remove the green tops) and arrange on top of first layer (I used about 1/2 of a quart of berries - pile on as many as you'd like).
Glaze:
Boil until clear:
2 cups water
1 1/4 cup sugar
1/4 cup cornstarch
Stir in:
3 ounce package of strawberry gelatin
Cool and pour over strawberries.
Note: This recipe can be adapted for any fresh fruit. When using other fruit, use lemon gelatin for the glaze.
I used a package of sugar cookie dough for the crust. Yikes! I've never bought store-bought cookie dough in my life! It worked out well, but you could just as easily use your own sugar cookie recipe.
After slicing the tube of dough into 1/4" slices, I laid them out on a pizza pan and used my hands to spread it out as evenly as possible. The more even the edge of the crust, the prettier and more like pizza it will be!
Here it is all baked. I baked this a week ahead of time, put it on a plastic cake round, wrapped it well, and put it in the freezer so it would be ready when I needed it. Just make sure to put it in your freezer where it won't get something put on top of it or it might crack.
On to the First Layer (according to the recipe).
Spread the cream cheese mixture evenly over the crust. I put it into the refrigerator while I cleaned and cut the berries.
Next - the Second Layer (according to the recipe - I count a total of 4 layers - but that's just me!) - on go the berries - which is hard unless they're all exactly the same size! They'll be covered with the delicious glaze, so the size difference is NOT that obvious. Then it went back into the frig until the glaze was ready to go.
Then we make the gelatin mixture - I poured it out of my pan and put it into a glass bowl to cool it faster. You can put it into the refrigerator to cool even faster if you need to.
It said to pour it on, so I used my 4 cup measuring cup to make pouring easier.
At the end, I needed to brush some gelatin mixture on to make sure it was all covered. It wasn't as firm as it maybe could have been, so some ran over the side. No one will care once they get a taste of this delicious dessert. I kept it in the refrigerator again until we were ready for it.
This. Is. So. Pretty.
Strawberry season is a great time to make this - but anytime at all is the BEST time.
You still have time to make this delicious pizza this weekend if you're having guests - or not. It was so good and so much fun - both to make and to EAT! The crust is crispy and then there's the creamy cheese layer with the sweet strawberries and the fun gelatin to top it all off! Kids will love it AND adults will love it!
