Today's recipe for 2 Ingredient Baked Pumpkin Donuts is very similar to a recipe I made on here a few years ago called 2 Ingredient Pumpkin Spice Muffins. In fact, they're exactly like the muffin recipe - except they're donuts!
I think baked donuts would have been something Grandma would have been on board with - donut goodness with out all the hassle of having to fry them in hot oil. Frying them takes a lot of time. Baking is quicker and is better for you, and these are RIDICULOUSLY easy to make. That being said, I'd totally rather have fried donuts. With THAT being said, these baked donuts are absolutely delicious - and FESTIVE!
Here is the recipe as I made it:
2 Ingredient Baked Pumpkin Donuts
Mix together:
1 boxed spice cake mix
1 can solid-pack pumpkin
Put filling into piping bag (or use a zip top bag and cut the corner off) to fill the well-greased "donuts" in the pan half full.
Bake at 400 degrees for 8-10 minutes, or until donuts springs back when you touch them.
I got two pans of donuts from this - even though I only have one pan - so remember to re-spray the donut pan in between if you only have the one pan.
Cool and drizzle with glaze, roll in a cinnamon-sugar mixture, or sprinkle powdered sugar on top.
Vanilla Glaze:
2 cups powdered sugar
1 teaspoon vanilla
2 Tablespoons milk, or enough to make glaze the consistency you like

Here are the 2 ingredients - spice cake mix and pumpkin. That's it.

Mix those 2 ingredients together. Done.

If you want this to be as easy as it can possibly be, put the filling into a piping bag. This makes for easy clean up.

Make sure to fill the donuts half full. Tip - DON'T FORGET TO RE-SPRAY BETWEEN ROUNDS. Because I did. And they stuck.

This recipe makes 12 donuts. Aren't they beautiful?!!

After I mixed up the Vanilla Glaze, I tried to dip a donut. Don't do that. These are a bit on the soft and fluffy side and it totally broke apart and I had to eat it. Someone had to. Using a spoon or fork and drizzling the glaze over top is the better way to go. You could also roll them in a cinnamon-sugar mixture (pretty traditional for our family) or sprinkle them with powdered sugar - whatever you prefer!

Of course, after drizzling, I added some Halloween colored sprinkles.

The sprinkles make ALL the difference. How can they be festive if you don't use the holiday sprinkles. It's just not the same without them. Truly.

If you're looking for a fast, easy, and of course, delicious last-minute Halloween treat, you're going to want to make a batch (or several) of these donuts. They're so good and just look how festive they are!
Kids will love these, adults will love these, I mean come on, everyone will love these! You can change up the sprinkles and make them all through the next couple of months into December. Maybe make them with chocolate cake mix and add just a bit of peppermint. What a great hostess gift these would make! I think you should go ahead and make your life just a little bit easier with these 2 Ingredient Baked Pumpkin Donuts.
