Pumpkin Spice Popsicles

Today's recipe for Pumpkin Spice Popsicles is one I made up because I love pumpkin (and spice). I also wanted a low fat treat, and this one works! If you need a little somethin' over the next 5-6 weeks or so, and you'd rather wait and overindulge during Halloween or the Thanksgiving holiday instead, this might just do the trick. It's that pumpkin spice thing. You know, the thing everyone waits for all year and then when it's finally time - bam! We get hit over the head with everything pumpkin spice. Well, if you can't beat 'em - join 'em! This one's for all you pumpkin spice lovers out there! It's very easy to make, it's festive (always a requirement for me), and it's very easy to eat! Enjoy! 🙂

Here is the recipe as I made it:

Pumpkin Spice Popsicles

Mix together:

2 cups non-fat plain Greek yogurt (I used Zero Sugar Vanilla - you could also use coconut milk for a creamier popsicle)

1/2 cup pumpkin

1 teaspoon pumpkin pie spice

1 teaspoon cinnamon

1 teaspoon vanilla

At this point you could make the frozen yogurt bark seen all over the internet right now (I made a bit of both), or move on to the next step.

Add:

1/2 cup unsweetened, vanilla almond milk

Pour into popsicle molds.

Freeze.

Oh yes - this uses aaaaaallll the pumpkin spice flavors of fall!

I mixed it up in my big glass measuring cup for easier pouring.

If you want to make frozen yogurt bark out of it - stop here and top it with all your favorite toppings. I topped this with chocolate chips, sliced almonds, graham cracker crumbles, and sprinkles - gotta have sprinkles! 🙂

Just let it freeze and cut it with a knife. I keep the cut up pieces in a freezer zip-top bag to keep handy for a delicious snack.

For the popsicles - add the almond milk, stir, and pour into popsicle molds. I HAD to also put 1/2 teaspoon of fall colored sprinkles into each mold first! These are going to be VERY festive.

Yes - they turned out VERY festive! The sprinkles made it a bit harder to get them out of the molds, but it worked out fine.

They are ridiculously pretty! Did I mention they're festive?!!

These popsicles are full of healthy pumpkin and lots of spice. They're going to be on constant replay during the next month or so, so I keep myself in check and ready for the big holiday treats. If you're not into pumpkin spice, maybe you'd like to make some Peach Pie Popsicles, Creamy Lemon Popsicles with Blueberries,or Blueberry Banana Popsicles instead! They're so easy to make, and if you don't have popsicle molds, use paper cups. Use sprinkles, if you have them, to make everything as festive as possible - it's more fun that way! You and your family will love these Pumpkin Spice Popsicles - especially if you all love the pumpkin spice "thing"!
