Vegan Sausage Pastry Mummies

Meat free sausages, wrapped in golden brown shortcrust pastry, these sausage mummies are a fun Halloween food idea. They're very simple and easy to make, and you can serve them with any dips you like

Yield; Seven mummies Cook time; 30 minutes

You'll need;

A tablespoon of oil
300g meat free sausages, I used a bag of frozen Bird's Eye Green Cuisine Cumberland Style Sausages
375g pre-rolled shortcrust pastry
Cloves or olives for decoration
A couple of tablespoons of plant milk

Method;

Start by heating the oil in a large frying pan over a medium heat. Once it's warmed up, pop the sausages in and cook them until they're golden brown. Cooking times may differ depending on which sausages you use, so check the time stated on the packet. Once they're cooked, set them aside to cool
Allow the pastry to come to room temperature before unrolling it. Use a sharp knife and slice the pastry into thin strips. Carefully wrap three or so strips around each sausage, covering it, keep going until all the sausages are covered. Place the sausages onto a lined baking tray, and brush each one with a little plant milk
Bake at 200°C/180°C fan assisted for 15-20 minutes, or until the pastry is golden
Once baked, decorate with the cloves/olives for the eyes, and give them 10 minutes to cool before serving. I removed the clove "eyes" before eating them, but I like how they look for decoration

Vegan Shortcrust Pastry

You can find vegan shortcrust pastry in most supermarkets, at least here in the UK. Mostly oil is used rather than butter, making is accidentally suitable for vegans, although it's always good to check ingredient labels just to make sure. Most supermarket own brand pastry is suitable for vegans, and there's Jus Rol pastry that's suitable for vegans too

This would also work with puff pastry if you'd prefer to use that. Again, most puff pastry in supermarkets here is accidentally vegan due to oil being used rather than butter
