Today's recipe for Bacon & Egg Casserole is an old one. We're talking 20-25 years old. Maybe you can't see it, but this recipe has been so well used, the paper it's written on is tattered and stained. I've had this one forever (I think it might have come from one of my sisters-in-law) and it's one of our family's favorites. My kids still request this one all the time, and of all the egg bakes/casseroles I've made over the years, this one is still their favorite. Recently, when I suggested we do a brunch instead of a family dinner on a Sunday morning, this is what they asked for. It really is easy to make, and you can have the bacon cooked and ready to go so there's nothing to do but pull it all together.

Here is the recipe as I made it:
Bacon & Egg Casserole
Coat a 9" x 13" casserole dish with vegetable spray.
Place in pan:
2 cups unseasoned croutons
2 cups onion and garlic croutons (I use whatever croutons I have, sometimes I stock up after Thanksgiving)
Pour over top:
1/4 cup margarine, melted (I used butter)
Sprinkle over top of crouton and butter:
2 cups cheddar cheese, melted
Mix together:
2 cups milk
8 eggs, beaten
1 Tablespoon prepared mustard
Pour over cheese and croutons.
Sprinkle evenly over top of all:
10-12 slices bacon, cooked crisply and chopped
Bake at 325 degrees for 45 minutes.
Allow to stand 15 minutes before serving.

This recipe is easy to make, but the ingredients are a bit on the decadent side. We start out with croutons and butter.

Next, on goes the shredded cheddar cheese.

Holding it all together is the milk, the beaten eggs, and the mustard.

The best part - the topping of bacon.

I had to serve this with some Blue Ribbon Muffins and some cherry tomatoes, with a sprinkling of parsley.

This stuff is so good and so easy to make and get ready. You can have the cheese shredded and the bacon cooked the day ahead then all you have to do is pull it together the next morning and put it in the oven. This is a great dish to serve for brunch when you have a house full of holiday company, or maybe just when you want an easy brunch dish when you're staying in for the weekend. It's great leftover, too. That really doesn't happen often with this one, but the lucky people who claim the leftovers say so!
