Biscottis are almond cookies Italian in origin. It got its name from the recipe which requires to be baked twice . A good biscotti is something that can withstand being dunked in hot coffee or tea thrice.
Let's get started,
Things you will need,
- Butter : 50 gm s
- Almond : 50 gm s , and chopped almond 2 tbsp
- Sugar : 100 gms
- Flour : 180 gms
- Vanilla essence
- Egg : 1
- Baking powder: 2 tsp
How I made it,
- Whisk soft butter and sugar together till the sugar dissolves and butter becomes pale
- Break in egg and whisk to combine
- Add in vanilla essence
- Sift in flour, baking powder, ground almond together and fold together till combined. It should be a little tough dough
- Mix in chopped almonds
- Place the dough on a cling film, and cover with cling film and using hands to form into a log. Refrigerate for half an hour.
- Place the cold log on to a parchment paper and bake at 180°c or 160° with fan for 30 mins . Take out and let it cool down a little.
- Slice up with a arrested knife and place the slices on baking tray and bake at the same temperature for 20 mins , rotate the tray mid way.
- Carefully place the cookies on wire rack to cool down and enjoy.
