I have made a few kinds of no-churn ice cream since figuring out that the filling for Lemon Ice was actually a no-churn ice cream, and because it's Christmas, what better flavor to try than a Mincemeat No-Churn Ice Cream? Perfect! All those Christmastime flavors in a make-ahead, store-in-the-freezer, ready-at-a-moments-notice kind of dessert! Love it! I have tried Lemon Blueberry No-Churn Ice Cream and Gingerbread No-Churn Ice Cream, and they were all so easy to do and so delicious! This is a great recipe to try if you have made something from Tomato Mince Meat (or regular store-bought mincemeat) and have a bit leftover. Mincemeat might be old-fashioned, but it's so, so good. Speaking of old-fashioned, I had to share this photo of me receiving a present from Santa. I had just turned one year old here, and I look like I'm not too sure about that guy with the red suit and beard! Ha! 

Here is the recipe as I made it:
Mincemeat No-Churn Ice Cream
Beat together:
1 can sweetened condensed milk
Juice and zest of 1 lemon
1 cup mincemeat pie filling
2 Tablespoons red and green sprinkles
Fold in:
1 pint whipping cream, whipped (I only had 1 cup in the container in my frig - husband's been using it in his coffee again - so I used the 1 cup whipped and 1/2 cup of just regular half-and-half mixed into the above mixture)
Put the ice cream mixture into a bread loaf pan and freeze (I don't know when I'm going to be using the ice cream, so I put it into a glass container with a lid to keep it as fresh as possible for as long as possible).
Let freeze several hours or overnight.

This uses simple ingredients and makes an absolutely delicious ice cream. The mincemeat and lemon gives it the flavor of Christmas! Remember - mincemeat has no meat in it (but it does use suet, which is - in this case - beef fat) - only fruit and spices.

When mixing in the mincemeat, I decided to make it extra festive by adding some red and green sprinkles to it.

I didn't put the mixture into a loaf pan this time. This time of year you never know how long it will be in the freezer, so I used a container with a lid. Even more festive - I put more sprinkles on the top so when you scoop it you will see even more of them and feel even MORE festive!

Mincemeat gives it the cinnamon and spice and the lemon gives it a nice freshness. I can't wait for you to try this one!

This might be one of my favorite Christmas desserts of all time. The flavor is so intensely Christmas-y, and I don't know what else to say - it's absolutely delicious! It's easy to make, easy to have made ahead and ready to go, easy to eat because it's so, so good, and I think you're going to love this Mincemeat No-Churn Ice Cream.
