Today's recipe for Potato Casserole is another family favorite usually enjoyed for our Easter dinner. This one originally came from one of my sisters-in-law, and I later found out that this recipe is usually called Funeral Potatoes. They are total comfort food - warm and cheesy and so, so good. This makes a big pan full of cheesy goodness, and that's a very good thing. There are not usually enough leftovers of these potatoes to cover all the leftovers of our Easter Ham - that's how good they are! They go fast and we all love them! The recipe is ridiculously easy to pull together and that's perfect for a busy Easter morning when you're trying to get everything into the oven and ready for the big dinner. You all know I love easy - easy is always good. I don't have the original handwritten recipe (I'm sure I copied it down on a scrap of paper), so I'll just write it out here.
Here is the recipe as I made it:
Potato Casserole
Mix together in a large bowl:
2 pounds frozen hash browns (that would be 32 ounces, but I could only find a 30 ounce bag)
8 ounces sour cream
8 ounces onion dip
1 can cream of chicken soup
10 ounces of cheddar cheese, shredded (I had a small 8 ounce brick of cheddar and used an approx. 2 ounce portion of another brick - can you ever have too much cheese? I think not!)
Salt and pepper (I don't use much salt because everything in here is fairly salty)
Put in casserole (I use a 9" x 13" cake pan lightly sprayed with nonstick spray for easy clean up).
Top with (I don't usually do this, but did here for showing the official recipe):
1/2 cup butter, melted
2 cups Corn Flakes cereal, crushed
Bake at 350 degrees for 90 minutes.

These are pretty simple ingredients, and you just put them all in! So easy!

The only difficult part of this recipe is that you are using frozen hash browns, and sometimes it's hard to get it all mixed in. Keep mixing - it will be fine. All the cheese will melt and make it all amazing no matter how well mixed it is.

I used a cake pan to put it in. Just smooth it out so it's ready to top with the buttery topping.

I put the cereal into a zip-top bag - that made it easier to crush.

Melted butter and crushed Corn Flakes cereal smells divine!

Then you put the topping on the potato mixture and bake!

Oh my goodness. So good.

Yep - it smelled like Easter Sunday in my kitchen!

My whole family absolutely loves this potato dish. Since the first time we tried it, it's been an important part of our Easter dinner. It just wouldn't be the same without it. The potatoes are perfect with the Easter Ham - I hope we have enough this year to last until the ham leftovers are gone! They just go so well together. Add some Orange Tapioca Jello and some Hot Cross Buns #2 and we're good to go!
