Apple Salad with Tangy Citrus Dressing
If you're looking for a treat that's sweet but healthful, you'll want to try this garden-fresh fruit salad, complete with homemade dressing.
Ingredients
Preparation time: 15 minutes
Cooking time: 5 minutes.
1/3 cup unsweetened orange juice
2 teaspoons cornstarch
1 teaspoon sugar
1 large (3-inch diameter) Granny Smith apple
1 large (3-inch diameter) Red Delicious apple
1/4 cup Ocean Spray Reduced Sugar Craisins
Directions
Yield: 4 servings
Serving size: 1/2 cup

1 - Combine orange juice, cornstarch, and sugar in a small saucepan over medium heat with a whisk. Stirring constantly, bring to a low boil and cook until sauce thickens, about 2 minutes. Remove from heat and allow to cool to room temperature. Core both apples and dice; you should have approximately 2 cups. Place apple pieces and Craisins into a small salad bowl. Pour cooled dressing over top, stir well to combine. Serve immediately or chill before serving.
