My passion for cooking originated in wanting to re-create dishes I had at a restaurant, or even dishes that I remember loving in my childhood back in Europe. A couple of months ago, I went to (my new favorite) Italian restaurant, Rezdôra, and their pasta is absolutely incredible. The dish I loved, 100% loved was Gramigna Giallo E Verde, which is made with Italian sausage and an amazing white cream sauce. I searched high and lo, but I could not find a recipe for it, so for weeks I researched it, and ended up combining a few recipes to finally come up with one that resembles the taste of this dish. While it is not 100% the same, it is definitely close enough, and super delicious. Enjoy this one with me!
Heat a medium sauce pan with a tbsp of olive oil, then add Italian sausage, and cook until done, while crumbling it with a spatula. Set aside on a paper towel. Add the shallot to the pan, and sauté for 2 minutes.
Add garlic and sauté for one more minute. Add white wine and cook until it simmers.
Add Rosemary and bouillon cubes, and simmer until the cubes are dissolved. Add heavy cream and parmesan cheese.
Add the sausage back to the sauce pan. Heat and stir well. Serve with your favorite pasta.
