Homemade Chicken Nuggets
The other day Ted could not stop talking about chicken nuggets. All morning he kept asking me to make them for dinner that evening. Sometimes I can not say no to that cute little face. We went to the supermarket to buy chicken.
Ted wanted to try to coat the nuggets with bread crumbs but I have always wanted to cook them in almond flour. I have never tried this method before. We didn't have a blender to make the crumbs with as it was in the dishwasher.
Therefore almond flour was used to make the coating. These were so good and Ted actually really enjoyed them too. Without the bread crumbs! We are definitely going to eat this meal again. I'm sure it would be a regular on the menu if Ted had anything to do with it! Below is a video and recipe for you.

Equipment
- Sharp knife
- Chopping board
- Bowls x 3
- Baking tray
Ingredients
- Chicken x 500g
- Tapioca flour x 2 heaped tbsps
- Eggs x 2 medium
- Almond flour x 8 - 10 heaped tbsps
- Salt and pepper to taste
Method
- Preheat the oven to 200°C or gas 5.
- Cut the chicken breasts into 1 inch pieces.
- Put the tapioca flour into one of the bowls.
- Crack the eggs into another bowl and scrambled it
- Then add the almond flour into the final bowl and add salt and pepper to taste.
- Mix these ingredients together.
- Place a piece of the meat in the tapioca flour, then dip it into the egg and then into the almond flour.
- Repeat the process until all the chicken has been coated in all the ingredients.
- Put the nuggets onto a plate and place into the fridge until the oven is preheated.
- Once the oven is preheated put the nuggets onto the baking tray and place them in the oven.
- Cook for 30 minutes or until the nuggets are golden brown.
- Remove from the oven and serve with chips and salad.
- Then enjoy.
Homemade Chicken Nuggets
Homemade Chicken Nuggets were a massive hit in our house. My husband Howard and Ted both asked for seconds. Which is normally unheard of in this house. Ted helped me to make the nuggets. We had a great time making them. It's a great job for a kid and a great way to spend time together. These are freezable as well and they make great leftovers for a lunch the next day too.
