Warming up.....
Steaks need to warm up before cooking. If you've spent the dollars to buy a beautifully marbled steak, don't dishonor it by sending it straight to the grill from your fridge. You need to let it warm up before it meets its fiery fate. Let all steaks (chicken and pork chops, too) rest at room temperature at least 15 minutes before putting them on a grill or skillet. This warm-up period will help the muscles relax so the steak cooks more evenly.
