Oven Baked Beef Curry

Saturdays and Sundays are normally the days I get to spend a lot of time in the kitchen. When I have the time I love to slow cook in the oven. As Winter is almost here I know my family and I are craving warming meals.

Curries are packed with spices and full of goodness. Recently I had beef stewing steak and bone broth in my fridge. Plus lots of spices in my pantry. Therefore I decided to throw these ingredients together and bake them in the oven. It was a delicious dish that I had to share with you. Below is a video and recipe for you.

Equipment

  • Sharp knife
  • Chopping board
  • Vegetable peeler
  • Vegetable grater
  • Saucepan
  • Teaspoon
  • Tablespoon

Ingredients

  • Beef stewing steak x 500g
  • Onion x 1
  • Courgette x 1
  • Red pepper x 1
  • Garlic x 2 cloves
  • Ginger x 2 tsp
  • Turmeric x 2 tsp
  • Garam masala x 2 tsp
  • Ground sweet cinnamon x 2 tsp
  • Coconut cream or natural yoghurt x 4 tbsps
  • Bone broth or chicken stock x 300ml
  • Salt or pepper to taste
  • Spinach x 2 handfuls
  • Fresh coriander x 2 handfuls

Method

  • Preheat the oven to 160°C or gas mark 3.
  • Peel, slice and dice the onions and set aside.
  • Next peel the courgette and grate it.
  • Cut the top from the red pepper and remove the core and the stalk.
  • Slice the flesh of the red pepper and set these ingredients aside.
  • Crush the garlic under the blade of the knife, then remove the skin and and slice the garlic and set this aside too.
  • Put the saucepan on a high heat and add oil to the base of the pan.
  • When the pan is hot add in the onions and fry until golden brown.
  • Add in the garlic and fry for a further 30 seconds to a minute.
  • Now add in the beef and fry until golden brown.
  • Next add in the grated courgette and red pepper and fry for a further couple of minutes.
  • If the pan starts to get to hot turn the heat down and add a little bit of the bone broth or chicken stock.
  • Stir again than add in the natural yoghurt or coconut cream.
  • Grate the ginger and turmeric into the saucepan and add in the garam masala and ground sweet cinnamon.
  • Pour over the bone broth or chicken stock and add salt and pepper to your tastes.
  • Turn the hot off and put the saucepan lid on.
  • Place the saucepan in the oven for 1 and a 1/2 hours to 2 hours.
  • While the curry is in the oven cook the rice.
  • Chop the spinach and coriander.
  • At the end of the cooking process remove the curry from the oven, take the lid of carefully and add in the chop spinach and coriander.
  • Stir this ingredients into the curry until they have wilted down.
  • Then serve with the rice and enjoy.
Oven Baked Beef Curry

Oven Baked Beef Curry was a very tasty dish on a fairly cold Autumn day. It was easy to cook and prepare but it was quite time consuming. It's definitely a meal that needs time to cook. All the ingredients in this dish are freezable so you could make a big batch. Then freeze it for another occasion. It also makes yummy leftover for lunch the next day day too.
