A Month of Thanks

Today's Bible Reading- Luke Chapters 11-12.

Good morning, my friends. I hope you're well. Our forecast for today: 52°, sunny, no rain, good air quality, winds are coming from the northeast at 3 miles per hour, and humidity is sitting at 67%.

It's currently 36° outside right now, and the sun is bright. Super bright. It's a true fall morning here. A little colder than normal, but I'll take it.

Welcome to November, by the way. A month of focusing on being grateful for what the Lord has provided. I've been so distressed over how degraded our society has become that I've lost focus of what really matters. This month, if I can remember, I'd like to focus on things I'm thankful for.

Today, I'm thankful for warm sweaters and heaters. I'm thankful for homemade socks to keep my feet warm. I'm thankful for hot coffee going into my belly and warming up my insides. What are you thankful for today?

The enchiladas last night were delicious. I ate entirely too many of them. I opted not to put salsa on mine, and I'm glad I did. I had a bit of heartburn last night. I've never had enchiladas made with corn tortillas, but these were good. Mom isn't a fan of corn tortillas though, so next time I'll try them with flour tortillas. Definitely a make again recipe. Half of it was my own concoction. I browned the ground beef with half a chopped onion, and two chopped hot peppers (deseeded of course). I think they were poblanos, but one was a light green and the other was a red one. I added a couple of minced garlic cloves as well. Once the mixture was cooked and the onion and peppers were tender, I followed the recipe on the can of enchilada sauce for assembly and baking instructions.

The enchilada sauce I used was green. I believe it's made with green chiles and tomatillos.

It's Wednesday, so I'll be looking at sales flyers today. Making menus. I went through my emergency food supply yesterday and found a few things that were spoiled. I dated the rest and picked out things that need used up by the end of this year, so I have a few things to work with.

I also need to find an air tight container and make some homemade cream of soup mix. I think it'd be much healthier than some of this canned stuff that's out there. Not so many chemicals and additives.

Let's see. What else is on my plate today? Ledgers, menus, grocery list making, I may go grocery shopping. Or I may split the shopping into two days. Not sure about that. If there's anything that I can get for Thanksgiving that's on sale, I'd like to do that.

Oh! I remembered that I need to change Gracie's fountain filter. That needs to be done. I also need to change the calendars. Okay.
