I'm sure I could find evidence of a little boy that loved fish. Now that those days are gone I have a young man who doesn't really like fish. I know he likes chicken nuggets so I decided to use a similar coating to my nugget recipe. Ted loved these bites and so did my husband Howard and I. It's definitely a good way to feed Ted fish and I'm sure we will be eating this dish again soon. Have you ever tried almond flour instead of breadcrumbs? If so what recipes did you use them in? - Chopping board
- Bowls x 3
- Baking trays x 2
- Small saucepan
Ingredients - Basa x 500g
- Eggs x 3 medium
- Rice flour or tapica starch x 2 - 4 heaped tbsps
- Almond flour x 2 - 4 heaped tbsps
- Dried mixed herbs x 1 - 2 tsp
- Sweet potato or potato x 800g
- Rosemary sprig x 1 large
- Frozen peas x 200g
Method - Slice the Basa fillets into 1 inch pieces.
- Put the rice flour or tapioca starch into a bowl and then put the almond flour into a bowl.
- Add in the dried mixed herbs with the almond flour and mix together.
- Crack the eggs and whisk these in the bowl.
- Dip a piece of the Basa into the flour or starch, then into the egg and then into the almond flour.
- Continue to do this with the rest of the fish until all the pieces are coated.
- Put the pieces onto a plate or chopping board and place them in the fridge for about 30 minutes.
- Preheat the oven to 180°C or gas mark 5 and put both the baking trays in at the same time.
- Peel and chop the potatoes into a chip shape.
- Pat them dry on the board and remove a baking tray from the oven.
- Oil the base of the baking tray cross the base.
- Spread the chips as evenly as possible across the baking tray.
- Add a little more oil to the chips and spread it with the plastic brush.
- Or alternatively toss the chips in the oil until the look evenly coasted.
- Put the try into the oven and bake until gold brown.
- Fifteen minutes before the end of the cooking process remove the other tray from the oven.
- Oil the base of the tray and put the Basa bites and put them into the tray.
- Carefully pour a little bit of oil over the top of the bites.
- Using the plastic brush spread the oil carefully and as evenly as you can across the top.
- Place this tray into the oven on the shelf above the chips.
- Let these cook for 15 minutes or until the fish flakes away from itself.
- Meanwhile put a pan of boil water on the hob and add the peas.
- Boil for about 3 - 5 minutes then drain.
- Once the fish and chips are golden brown remove from the oven.
- Serve with the peas and enjoy.

Therefore I think it's best to make this meal at the weekend. These bites also made a yummy lunch the next day. So these make good leftovers and Ted asked if there were any for his packed lunch box too.
