Now that Christmas is over and Winter is here, I want Summer tomorrow. I hate to be Nelly negative but I have always found January a bit depressing. It's the one month of the year that seems to be not great for everyone. The next time we get to celebrate together is Easter and that always feels like a million miles away.
Therefore to cheer us up I like to cook meals we might eat in Summer or something similar. This dish it that something similar. It's got a summer vibe with the BBQ sauce but can be eaten in Winter too. This dinner cheered us up enormously and we hope it will do the same for you. Below is video and recipe for you.

Equipment
Sharp knife
Chopping board
Saucepan
Blender
Tablespoon
Stirring spoon
Ingredients
Leek x 1
Courgette x 1
Red pepper x 1
Tinned Tomatoes x 2
BBQ sauce x 2 tbsps (I use Dr Wills)
Tamari x 2 tbsps
Oregano x 1 - 2 tsps
Salt and pepper to taste
Fresh coriander x 1 handful
Lime x 1 juice
Pork x 500g
Pasta x 300g
Method
Cut the top and the bottom from the leek and slice into it 1/2 centimetre pieces.
Peel and grate the courgette.
Slice the top from the red pepper and remove the core and the stalk.
Now slice and dice the flesh into 1 centimetre pieces.
Put the large saucepan onto a high heat on the hob and add oil to the base.
When the pan is hot, add in the leeks and fry until they start to soften.
Add in the red pepper and fry for another 5 minutes or until the pepper starts to soften.
If the pan gets hot and the ingredients start to stick to the base turn the heat down.
Then add a little water to help unstick those ingredients.
Next add in the courgette and fry for a further few minutes.
Pour over the tomatoes and add in the BBQ Sauce and tamari.
Sprinkle over the oregano and salt and pepper to taste.
Stir all of these ingredients together.
Turn the heat down to low and leave to simmer for about 20 - 30 minutes.
Once the sauce starts to look jammy and all the liquid disappears remove from the heat.
Leave the sauce to cool completely.
Add the sauce to a blender along wit the juice of the lime and the coriander.
Blend these ingredients together until smooth.
Put the large saucepan back on the hob and add oil to the base.
When the pan is hot add in the pork and fry until it becomes golden brown.
Pour over the sauce and turn the heat down.
Leave the BBQ pork to simmer while you cook the pasta.
Cook the pasta as per the packet instructions.
Once the pasta is cooked add the pasta to the sauce.
Then serve and enjoy.

BBQ Pork Pasta is a delicious dinner that was gobbled up by my little family and me. It's easy to prepare and cook. All the ingredients in this dish are freezable so you could make extra and freeze for another occasion. Plus it makes yummy leftovers too.
