Pasta With Aubergine & Spicy Tomato Sauce

フランス菓子教室もあり、ビーフのビール煮も作ったので、夕食は簡単パスタ。早く食べた方が良さそうな茄子が1本あったので、茄子とスパイシーなトマトソースのパスタにしました。

I had the French Baking Class this afternoon, then we cooked Beef in Beer (for tomorrow), so the evening meal was very simple and easy - pasta with aubergine & spicy tomato sauce.  We had one aubergine left in the fridge so I wanted to use it.

こちらの茄子は皮が硬くて口に残ってしまうことが多いので、茄子の皮を一部剥こうか迷ったのですが、皮がないと崩れてしまいますし見た目も悪いので剥かずに使うことにしました。避けて食べれば良いと思ったのですが、結果的には硬くなく、問題なく美味しくいただけました。茄子はコロコロと切って焼いて取り出して、玉ねぎとニンニクを炒めて缶トマトを加えて少し煮て、茄子を戻して茄子が完全に柔らかくなるまで弱火で煮て、パスタと和えるだけ。最後にチリ入りのオリーブオイルを加えてピリ辛にして、パルメジャーのチーズを削りかけて出来上がり。(途中、塩胡椒)大好きなタイプのパスタ、とても美味しかったです!

I find aubergines here often have very tough skin and seems to be left in our mouth even after cooking well, so I was thinking of peeling some parts but in the end decided against it.  Without skin, aubergine can get mushy easily and it doesn't look as attractive.  Surprisingly it wasn't hard at all after all, it was very nice and tender.  All I did was cutting aubergine, sautéed with olive oil and took it out.  Sautéed chopped onion and sliced garlic, added some of a tin tomato (pulpe), salt & pepper and simmered it for a short time before adding the sautéed aubergine and simmered until aubergine was complete soft.  After plating, we added a little drizzle of chilli olive oil, then grated parmesan cheese.  Very tasty!  I love this type of pasta.

 

 

 

 

そして、もちろん、今日はデザートも。フランス菓子教室で作ったオレンジ風味のティラミス。

Of course, we had a dessert as well - Orange flavoured Tira-mi-su that I made at the French Baking Class.

 

 

 

乳製品は得意ではないので、ティラミスは美味しいと思えるものとヘビーすぎていただけないものとがありますが、今日のはペロリと食べてしまいました。美味しかったです!

I'm not so keen on dairy products so I find some tira-mi-su too heavy but this one was easy to eat, delicious!
