March's Memory Verse- John 14:6.
Good morning, my friends. I hope you're well. Our forecast for today: Patchy fog with sunshine popping out later, 70°, winds are calm, no rain, and humidity is sitting at 97%.
Spring has arrived. I think. The Bradford pears are in bloom. Ick. Beautiful trees, but stinky and easily rotted out.
Thelma has been fed, Gracie has had nom noms, my first cup of coffee has gone cold. It's Monday.
Today I'll be handling ledgers, laundry, and I need to go get more gallbladder stuff.
I also need to check the greenhouse and see how it's doing. Maybe work on planting some flower seeds. I found a shade mix of seeds at the garden center on Saturday and got two packs. I planted those over where the rotted out rose of Sharon had been. I found a packet of flower seeds that are supposed to attract honey bees, which I saw one on Saturday! It was doing its little dance on a dandelion.
I feel like there's something important I'm supposed to do today, but I don't have anything written down. I don't know.
The gumbo. I was going to tell you about the gumbo. It turned out okay. The recipe definitely needs some Lizzi-fication. That's a new word. First, I need ot reduce the amount of cayenne. I put in half what was called for and it was still a bit too much. The recipe called for 3 tablespoons! I put in 1.5 tablespoons. I can reduce it down to 1 tablespoon and there will still be plenty of spice.
The second thing I can do is add more veggies. There was bell pepper, white onion, green onion and celery in there, but you couldn't tell. I had thought that gumbo usually has okra in it. Maybe that's something else I'm thinking of, but I did find a gumbo mix of frozen veggies while I was looking for gumbo related things on the grocery store website. It had corn and okra in it. So, maybe next time, I'll use that.
The third thing I think I may do is forego the sausage. Just use chicken. The sausage put way too much grease in there. My gallbladder was squeaking after one bowl of the dish.
Maybe by doing all these changes make it not gumbo anymore, but the greasiness is too much. I was trying to think of what would make it so greasy and Mom said it's the sausage. My dad really enjoyed it, though. He turned the hood fan on, and the surrounding area of our neighborhood smelled like gumbo half the day. I think Pop ended up having two or three bowls of the stuff.
Supper tonight is leftovers. I'll see if I can skim some of that grease off the top and I'll have to make more rice. Other than that, I don't have a whole lot on my things to do list.
I'm making progress on Mom's sweater. I'm hoping that once this left front piece is done, the arms go quickly. The last thing I'll do before putting it all together is make the pockets.
