Believe it or not I can find meal planning quite difficult. Firstly I live with two fussy eater. My son Ted who is now 10 and my husband Howard who should know better. Hee, hee!!! These two can be slightly awkward when it comes to meal times. I do always try to bear this in mind. Soups are normally one food they will both eat.
However Ted enjoys soup that is blended. If I blend it Ted doesn't know what's in it and will eat it with cheesy bread. This time I decided to make the soup with potatoes. Ted wasn't too impressed at first as he does love cheesy bread. Then he tried it and he said really liked it. I was pleasantly surprised and I think so was Ted. We really enjoyed this soup and we will be making it again soon. Below is a video and recipe for you.

Equipment
Sharp knife
Chopping board
Large saucepan
Stirring spoon
Tablespoon
Teaspoon
Ingredients
Leek x 1
Parma ham x 6 - 8 slices
Butternut squash x 200g
Carrot x 1
Green beans x 1 - 2 handfuls
Potatoes x 600 - 800g
Chicken stock x 800ml - 1 litre
Tamari x 2 tbsps
Dried mixed herbs x 1 -2 tsps
Salt and pepper to taste
Method
Peel the butternut squash and remove any seeds with a spoon.
Cut the squash into small chunks about 2 centimetre pieces.
Next peel and cut the carrot into 2 centimetre pieces.
Now cut the top and the bottom from the leek and slice the leek into 1/2 centimetre pieces.
Peel the potatoes and cut into 1 inch pieces.
Slice the Parma ham into thin strips width ways.
Put the large pan onto a high heat on my hob.
Add oil to the base of the saucepan and let it heat up.
When the pan is hot add in the leek and fry for until it starts to soften.
Add in the butternut squash and carrots and fry for about 5 - 10 minutes.
Or until they start to soften.
Next add in the Parma ham and fry for a further minute or so.
Sprinkle over the dried mixed herbs and fry for a further minute or so.
Pour over the stock and tamari and bring to the boil.
Add in the potatoes and bring to the boil again.
Turn the heat down and leave to simmer for a about 10 - 15 minutes.
Or until the potatoes are fork fall.
Add in the green beans and bring the pan to the boil.
Then turn the heat down for about 3 - 5 minutes or until the green beans are squeaky between the teeth.
Add salt and pepper to taste.
Then serve and enjoy.

Parma Ham and Potato Soup was a huge success in our house. I have to state again how pleasantly surprised I was by the reaction of my little family to this soup. It was an easy soup to prepare and cook. Plus all of the ingredients are freezable so you could make a big batch and freeze it for another occasion. It also made a really lovely lunch the next day.
