Sweet and Sour Parma Ham Fried Rice with Egg

Nowadays due to the cost of living crisis we tend to shop in Costco as it is slightly cheaper than the supermarket. Although you do have to buy a large amount of the items we always eat everything we have brought. I have discovered that Costco is a great place to buy Parma ham.

My son loves to eat it as a snack. I love to add it to recipes as it makes them very flavoursome. Stir fries are always quick to make and they can be very tasty too. I decided to add the ham for extra protein but it gave the dish a lot of flavour as well. We love it and we hope you will too.

Serves 4

Equipment

  • Sharp knife
  • Chopping board
  • Large pan or wok
  • Small mixing bowl
  • Teaspoon
  • Frying pan
  • Stirring/serving spoon

Ingredients

  • Parma ham x 8 slices
  • Spring Onions
  • Bamboo shoots x 1 tin
  • Carrot x 1 large
  • Green beans x 1 handful (optional)
  • Brown rice x 300g
  • Apple cider vinegar x 2 tbsps
  • Tamari x 2 tbsps
  • Honey x 1 tbsp
  • Tomato puree x 1 tbsp
  • Ground ginger x 1 - 2 tsps
  • Salt and pepper to taste

Method

  • Start by measuring two centimetres on a wooden spoon.
  • Measure your rice and pour it into the sieve.
  • Wash the rice through twice under a tap.
  • Put the washed rice into a saucepan.
  • Flatten the rice down as much as possible until it's all even spread across the base of the pan.
  • Boil the kettle.
  • Place the wooden soup on top of the rice.
  • Now carefully pour over the boiling water until it's level with the line on the spoon.
  • The water should be 2 centimetres above the above the top of the rice.
  • Next put the hob on to a high heat and bring the water to the boil.
  • Put the lid on and once it boils turn the heat down to a low simmer.
  • Leave to cook for 30 - 40 minutes.
  • Do not remove the lid during the cooking process.
  • When the water looks like it has been absorbed by the rice then lift the lid.
  • Give the rice a stir and if there is still water in the bottom pop the lid back on for five more minutes.
  • Continue to do this until all the water has evaporated.
  • Remove the lid completely and give the rice a stir.
  • Set aside for until it cools completely.
  • Remove the tops and the bottoms from the spring onions and then slice and dice the flesh into half centimetre pieces.
  • Peel and slice the carrots lengthways into batons.
  • Slice the green beans as well if necessary.
  • Put the Parma Ham onto a chopping board and slice into strips.
  • Place the large pan or wok onto a high heat on the hob and add oil to the base of the pan.
  • When the pan is hot add in the spring onions and fry until the start to soften.
  • Add in the Parma ham and fry until it start to turns golden brown.
  • Next add in the carrots and green beans and fry for a further few minutes.
  • Or until they are at a softness you like to eat.
  • Add in the cooked rice and continue to fry until the rice heats through.
  • Set these ingredients to one side.
  • In the small mixing bowl add the apple cider vinegar, tamari, tomato puree, honey and ginger.
  • Sprinkle in the salt and pepper to taste.
  • Mix these ingredients together then pour over the rice and stir in.
  • Set to one side again.
  • Crack the eggs into a bowl.
  • Put the cast iron pan on a high heat on the hob.
  • Pour the enough oil into the base of the pan and leave it to heat up.
  • Once the pan starts smoking it will be hot enough.
  • Pour in the eggs.
  • They will start to cook on the bottom very quickly.
  • Start to cut slits in the egg whites.
  • You will notice the top of the whites cooking as well.
  • Soon you will come to a point where you won't be able to cut slits.
  • Now leave the eggs to cook until the whites start to surround the yolks.
  • The bottom of the eggs will hopefully be a lovely golden brown colour.
  • Once they are then remove from the oven and serve with the rice.
  • Then enjoy.

Sweet and Sour Parma Ham Fried Quinoa with Egg was again a deliciously flavoursome dish that we all enjoyed. It was easy to prepare and cook. Which is what I love and it was a simple dish to serve the family as well. You could make extra and eat the leftovers the next day. Only if the rice has been cooked on the day of eating. Also I wouldn't reheat this meal either. Rice tends to produce germs as soon as it's cooked. These germs aren't good for our stomachs. So it's always best to eat it on the day or the day after no longer.
