Casa Kimbab is a Korean restaurant. Specializes in gimbap, modernized into newfangled yet traditional formulations. Recently opened.
The menu offers 9 variations of gimbap: beef, ripe kimchi + tuna, spicy fishcake, stir-fried pork, long sausage + egg omelet, egg, pickled chili, dried squid strips, kiddie. Topping out at 8,000 won per roll (beef, old kimchi + tuna), double what most other places would charge - ideally priced for a neighborhood where residents believe that overpaying for things make them better people.
After work, W had to drop by to give something to her mother. While waiting, I got gimbap to go, for dinner.
They were okay. While the fillings were fine as individual components (except the pork, which was dry), and the focused simplicity of the formulations was to be commended, the rolls on the whole were somewhat lacking in balance - indeed, the whole point of gimbap is the craziness of the combination that delivers a touch of savory, a touch of tang, a bit of crunch, a bit of soft, kinda like bibimbap.
