About This Recipe:
This Moroccan carrot salad is a quick, colorful, and healthy side dish for any meal. It is also a dairy free slaw so it's great for picnics, or for taking to school or work. I love all the different elements in this slaw- the sweet raisins, the tangy mustard and vinegar, and the crunchy shredded carrots. You can grate your own carrots, but I always buy shredded carrots to make this recipe even easier. This carrot salad is so addicting, and will have you thinking that carrots have never tasted this good!

Ingredients (6 servings)
-14 oz shredded carrots
-1/2 cup golden raisins
-1/3 cup parsley, finely chopped
-Salt and pepper
Dressing
-1/2 orange, juiced
-2 tbls apple cider vinegar
-1 tbl whole grain mustard
-1 tbl honey
-1/4 cup olive oil
Instructions (15 minutes)
1. In a small bowl, soak the raisins in warm water for 5 minutes to rehydrate.
2. In a large bowl, whisk together the dressing ingredients, and season with salt and pepper.
3. Toss the shredded carrots and parsley in the bowl with the dressing, add in the rehydrated raisins, and season with salt and pepper.
