Dear Foodies

My husband and I are a big fan of South Indian cuisine. It is so flavourful and spicy. We never get tired of eating dosa, idli, uttapam, medu vada, sambhar or tamarind rice. I try to cook at least one of these food each week.

Recently we went to one of the South Indian restaurant. One of the item we order was garlic chili dosa. They spread the paste of the flavours you ask while cooking dosa/uttapam. We really liked the flavours as we are spicy eater and garlic added wonderful flavour to the dosa. So when I was planning to make uttapam/dosa at home, I thought of preparing a spread which I can then use while making uttapam/dosa. It was an instant hit. Here is how I made the spread which was so flavourful and spicy 😋😋

Preparation time: 15 minutes

Cooking time: 2-3 minutes

Ingredients:
8-10 red dry mild chilies soaked in warm water for 2-3 hours
4-5 cloves of garlic
2 tbsp roasted peanuts
Small piece of ginger
8-10 fresh curry leaves
1/2 tsp red chili powder (optional)
Lemon juice or small piece of tamarind
Salt to taste

Procedure:
1. In a blender jar, add soaked chili, garlic, roasted peanuts, ginger, curry leaves, chili powder (optional), lemon juice (tamarind), salt and 1 to 2 tbsp water. Make a smooth paste and spread is now ready. You can keep it in the fridge for 4-5 days.

2. When you are planning to make uttapam/dosa, heat a flat non stick or cast iron pan. Spread the oil and wipe with paper towel. Always make the first uttapam very small, when ready...rub the pan with it to make it non sticky. (Tip: you can also rub hot pan with slice onion to make it non stick). Now spread the batter as desired thickness, spread slight oil on the top. When lower side is cooked, flip it and cook the top side. When ready, flip again  and spread chili garlic spread top.

3. Serve when hot. This spread makes everything more flavourful and spicy. Garlic, ginger and curry leaves makes it very flavourful and red chili adds nice spice to it.Chili Garlic Spread1Chili Garlic Spread
Enjoy this hot and spicy dip. You can use this on toast if you like spicy bread.
