Vegan Spinach and Cheese Gozleme

Ingredients:

For the dough:

  • 3 cups (375g) Flour
  • 1 teaspoon Salt
  • 3/4 cup (180ml) Plant-based Milk
  • 1/3 cup (80m) Water

For the filling:

  • Olive oil
  • 1 Onion, chopped
  • 400g Fresh Spinach
  • 300g Vegan Feta Cheese (or any vegan cheese of choice)
  • Salt to taste
  • Pepper to taste

Directions:

  1. Prepare the dough: In a large bowl, combine the flour and salt. Add the plant-based milk and water, then mix until a dough is formed. Knead the dough for 4-5 minutes until it becomes smooth and soft. Place the dough in a bowl, cover it, and allow it to rest while preparing the filling.
  2. Make the filling: In a pan, heat 2 tablespoons of olive oil. Add the chopped onion and sauté for 5-6 minutes until softened. Add the chopped spinach and cook until wilted.
  3. Prepare the filling mixture: Transfer the cooked onion and spinach into a large bowl. Crumble the vegan feta cheese into the bowl and season with salt and pepper to taste. Mix well until all ingredients are combined.
  4. Assemble the Gozleme: Divide the dough into 6 equal parts and shape each part into a ball. Roll out each ball into a thin rectangle. Place 2-3 tablespoons of the filling mixture in the center of the dough, leaving about 4cm of space around the edges. Fold the edges over the filling to enclose it.
  5. Cook the Gozleme: Heat a large skillet or pan over medium-high heat. Place the Gozleme on the skillet and cook until golden brown on both sides, pressing gently with a spatula to ensure even cooking. Optionally, brush each side with a bit of olive oil or melted vegan butter for added flavor. Repeat with the remaining dough and filling.
  6. Serve and Enjoy: Once cooked, transfer the Vegan Spinach and Cheese Gozleme to a serving plate. Cut into slices and serve hot, accompanied by your favorite dipping sauce or enjoy them as they are!
