Avocado Garlicky Mushroom Toast
Recipe:
Makes 2 large slices of toast
Ingredients:
For the Mushrooms:
- About 250-300g chestnut mushrooms
- 1 clove garlic, crushed
- 1 tablespoon olive oil
- Generous splash of tamari sauce
- 2 tablespoons thyme leaves
- Sprinkle of black pepper
For the Avocado:
- 1 ripe avocado
- Juice of 1/2 lemon
- Pinch of sea salt or pink Himalayan salt
For Assembly:
- 2 slices of bread of your choice (crunchy sourdough recommended)
Instructions:
- Prepare the Mushrooms: Begin by washing the mushrooms and slicing them. Heat olive oil in a frying pan over medium heat. Add the crushed garlic and cook for about 1 minute, stirring occasionally to prevent burning. Add the sliced mushrooms and tamari sauce, then cook for 8-10 minutes until all the moisture evaporates. Toss in fresh thyme leaves and black pepper.
- Mash the Avocado: In a bowl, mash the ripe avocado with a fork until smooth. Add lemon juice and salt, then mix well to combine.
- Toast the Bread: Toast your bread slices until they reach your desired level of crunchiness.
- Assembly: Spread a thick layer of mashed avocado evenly over each slice of toasted bread. Top generously with the cooked garlicky mushrooms.

2 slices of bread of your choice – we recommend crunchy sourdough
Start by cooking the mushrooms. Wash them and slice them. Heat up the olive oil in a frying pan. Add the crushed garlic and cook for 1 minute, keep stirring from time to time to prevent from burning. Add the sliced mushrooms, the tamari sauce and cook for about 8-10 minutes until all the water from the mushrooms her evaporated. Add the fresh thyme and black pepper.
To prepare the avocado simply mash it down with a fork and add the lemon juice and salt. Toast the bread and spread a thick layer of the avocado on top and mushrooms. Enjoy! .
