BBQ Mince and Mash Potatoes

Mealtime is never easy in our house. My husband Howard and son Ted have a variety of differing tastes. It's challenging to know what to serve them for dinner. Now I know they love BBQs and mash potatoes so I decided to put the two ingredients together. I came up with this delicious dinner that was very well received by my little family. We hope you enjoy it as much as we do.

Equipment

  • Sharp knife
  • Chopping board
  • Vegetable grater
  • Tablespoon
  • Stirring spoon
  • Baking tray
  • Mixing bowl
  • Masher

Ingredients

  • Beef mince x 500g
  • Onion x 1
  • Carrot x 1
  • Chicken stock or bone broth x 200mls
  • BBQ sauce x 2 tbsp
  • Potato or sweet potato x 800 - 1 kg
  • Butter x 2 - 4 knobs
  • Milk x 50 - 100 mls
  • Salt and pepper to taste

Method

  • Preheat the oven to 200°C or gas mark 5.
  • Wash and piece the potatoes or sweet potatoes with a knife.
  • Once the oven has preheated put the potatoes on the baking tray and place in the oven.
  • Cook the potatoes for an hour and then remove from the oven and leave to cool.
  • Peel, slice and dice the onion and set aside. .
  • Next peel the carrot carrot and and slice and grate them.
  • While the potatoes are cooking put the large saucepan onto a high heat.
  • Add oil to the base of the pan and leave it to heat up.
  • When the pan is hot add in the onions and fry until they start to soften.
  • Once the onions have softened add in the courgette and carrots and fry for a good 5 minutes.
  • Fry for a further minute or so.
  • Now add in the beef mince and fry until they are golden brown.
  • Pour over the stock and the BBQ sauce.
  • Bring the ingredients to the boil.
  • Sprinkle over the salt and pepper to taste.
  • Then turn the heat down and leave to simmer.
  • Once the potatoes have cooked remove from the oven and leave to cool.
  • Then cut the potatoes open and scoop out the potato from the skins.
  • Discard the skins and put the potato into a large mixing bowl.
  • Mash the potatoes with the butter, milk and a touch of black pepper.
  • Once the mash is smooth, remove the mince from the hob.
  • Chop the coriander and add to the mince beef.
  • Stir into the mince beef until the coriander has wilted.
  • Then serve and enjoy.

BBQ Mince and Mash Potatoes was a yummy meal that we all enjoyed. It was very easy to prepare and cook. You could make this in advance of the meal and store it in the freezer until you want to eat it. It will keep for up to 6 months before it starts to degrade.
