Ready for your beach body? I'm not, so don't worry. It might be a little late in the game, but let's a little lighter for now. Fish is always a good idea. Healthy, low in calories, and delicious! I'm a big fan of Shrimp Scampi, so when I bought a gorgeous piece of fresh salmon, I immediately had the great idea of making Salmon Scampi. I loved this dish, and it's very beach body conscious, if you know what I mean...
What you'll need:
- 3 tbsp olive oil
- 1 pound fresh salmon, cut into slices
- 4 cloves of garlic, crushed
- salt and pepper to taste
- 3 tbsp unsalted butter
- 1/4 tsp crushed red pepper flakes
- 1/2 cup dry white wine
- 1 tbsp fresh lemon juice
- 1/2 cup heavy cream
- 1/4 cup fresh parsley, chopped
Heat a large non stick skillet to medium to low heat. Add he olive oil. Pat the salmon dry, and sprinkle both sides with salt and pepper. When the oil is hot, add the salmon flesh side down, and sear 2 to 3 minutes. Flip and cook them for another 3 minutes. Remove the salmon and let it rest on a plate. Wipe the skillet clean.
Heat one more tbsp of olive oil and 1 tbsp of butter in the skillet. Add the garlic and red pepper flakes, and stir for 30 seconds.
Add wine and lemon juice, and bring it to a boil. Cook while stirring, for about 2 minutes. Add the heavy cream and simmer for about 2 minutes.
Add fresh parsley to the sauce. Return salmon back to the skillet, and cover with sauce. Serve over rice, pour the sauce over the rice and salmon after plating.
