Quinoa is the seed of a grain. It's so tasty and I like to cook it exactly the same way I cook rice. Quinoa has a nutty flavour to it. I think the flavour makes dishes more interesting. - Chopping board
- Saucepan
- Stirring spoon.
- Teaspoon
- Tablespoon
- Colander
Ingredients - Prawns x 500g
- Spring onions x 6 - 8
- Courgette x 1
- Red pepper x 1
- Turmeric x 1 tsp
- Cardamon seeds x 8 - 10 pods
- Quinoa x 300g
- Chicken or vegetable stock or bone broth x 60o mls
- Tamari x 2 tbsp
- Salt and pepper to taste
Method - Remove the the tops and the bottoms from the spring onions.
- Slice the flesh into 1/2 centimetre pieces.
- Peel and grate the courgette.
- Cut the top from the red pepper and remove the core and the stalk.
- Slice and dice the flesh of the pepper.
- Set these ingredients to one side.
- Measure the quinoa and put it into the sieve.
- Place the quinoa under the tap and rise through thoroughly.
- Set the quinoa to one side.
- Put a large pan onto a high heat on the hob and add oil to the base of the pan.
- When the pan is hot add in the spring onions and fry until they start to soften.
- Next add in the red pepper and fry for a further 5 minutes or until the pepper start to soften.
- Add in the courgette and fry for a further minute or so.
- Sprinkle over the turmeric and under the blade of the knife crack open the cardamon pods.
- Remove the seeds and put the into the saucepan.
- Stir all of these ingredients together for a minute or so.
- Put the quinoa into the saucepan and fry for about a minute.
- Pour over the chicken or vegetable stock or bone broth.
- There must be enough to cover the quinoa and then two centimetres above the top of where the quinoa sits in the pan.
- Add in the tamari and salt and pepper to your tastes.
- Put the pan onto a high heat on the hob and put the lid on.
- Let the pan come to the boil.
- When the pan is boiling turn the heat down to a medium heat.
- Leave the pan to simmer until all of the liquid has disappeared.
- It will take a little while to cook the quinoa so please be patient.
- On my hob it takes a good 10 - 15 minutes but other hobs my be different.
- Once the liquid has disappeared remove from the heat.
- Be careful towards the end as the quinoa can sometimes stick to the base of the pan.
- Towards the end be sure to check by putting the spoon in the quinoa to see if there is any liquid left.
- If there is no liquid fluff it with the spoon.
- However if there is liquid put the lid back on and leave for a further few minutes.
- Continue this process until all the liquid disappears.
- Once the quinoa is cooked add in the prawns.
- If using uncooked prawns keep stirring them into the quinoa until they turn pink.
- It should take around 3 - 5 minutes for this to happen.
- When they are cooked remove from the heat immediately.
- Chop the coriander and stir into the quinoa mixture.
- If using cooked prawns stir them in and remove from the heat.
- Again chop the coriander and stir into the quinoa.
- Then serve and enjoy.
Fragrant Prawn Quinoa Fragrant Prawn Quinoa was a yummy meal. It was very easy to prepare and cook. You could make this dish in advance of a meal. You can freeze it as well. However if you are using cooked prawns that have already been frozen I wouldn't freeze them again. Seafood if not always great when frozen so it's best not to keep refreezing it.
