It's quick and easy and we normally have all of the ingredients in the house. We have had a busy week so I thought about making this for our dinner. Instead of pasta I thought we could have mash or roast potatoes. Then I remember we had not had fish cakes in a while. Therefore I decided to make the best go to meal into fish cakes. They were delicious and of course, I had to share the recipe with you. What do you enjoy making with tinned tuna that the whole family eats? - Sharp knife
- Chopping Board
- Large saucepan
- Frying pan
- Stirring spoon
- Juicer or fork
- Cheese grater
- Bowls x 2
Ingredients - Tuna x 2 - 4 tins
- Potatoes x 800g
- Onion x 1 large
- Basil x 1 large handful
- Lemon x 1 (juice)
- Cinnamon x 1 tsp
- Tomato puree x 2 tbsp
- Parmesan cheese or strong cheddar x 80g (optional)
- Olive oil for frying
- Salt and pepper to taste
Method - Peel the potatoes and chop into 1 inch pieces.
- Once the potatoes have been cut put them into a saucepan with cold water.
- Place the saucepan onto the hob on a high heat.
- Bring the pan to the boil.
- Turn the heat down and leave to simmer for 5 minutes.
- The potatoes must be knife fall and not fork fall.
- If the potatoes fall from a knife easily then that's done.
- Remove from the heat and pour through the colander over the sink.
- Put the colander on top of the saucepan and leave to cool.
- Now chop the onion into slices
- Next remove the basil leaves from the stalk and set the leaves aside
- Chop the basil stalks into small pieces.
- Peel the carrot and grate it.
- Set these ingredients to one side.
- Heat the frying pan on a medium to high heat and add the olive oil.
- When the pan is hot enough add the basil stalks and cinnamon.
- Fry for 2 - 3 mins.
- Add the onion to the pan and move around until the onion is translucent.
- Now add the grated carrot and fry for a further minute or so.
- Remove these ingredients from the heat.
- Open the tinned tuna and drain if necessary.
- Put the frying pan ingredients into the cooled potatoes and add in the tinned tuna.
- Grate over the cheese (optional) and grate over the cheese.
- Next add in the butter and lemon juice.
- Mash these ingredients together.
- The potatoes will be harder to mash and they will need a little elbow grease.
- The effort are worth the result so keep calm and carry on.
- Dampen your hands so the mixture doesn't stick as easily.
- Divide the mixture into 4 or 8 parts.
- Grab a piece of the mixture and shape it into a burger or patty.
- Put it on the plate.
- Once the fish cakes are done put the plate into the fridge for at least two hours or overnight.
- Preheat the oven to 180° and put a baking tray in.
- When the oven has preheated put the cakes into the preheated baking tray and place in the oven for 15 - 20 minutes or until the potato is golden brown.
- Serve with salad or beans and enjoy.
Fragrant Tuna Potato Cakes Fragrant Tuna Potato Cakes were a huge hit. Nowadays my son Ted, who is ten, isn't a fan of fish. It did make me wonder how these would be received. Ted does love tuna and jacket potato. So I thought that he might like these fish cakes. Thankfully I was right. It pleases me as I now have another go to meal I can use. These fishcakes could be made in advance of the meal and stored in the freezer. They can also be made the day before and put in the oven the next day. Plus they make delicious leftover too.
