Ingredients:

  • 2 cups broccoli florets (fresh or frozen)
  • 1 cup shredded cheddar cheese (or your choice of cheese)
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/2 cup almond flour
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 teaspoon dried oregano (optional, for extra flavor)
  • 2 tablespoons olive oil or cooking spray for baking

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Prepare the Broccoli: If using fresh broccoli, steam or blanch the florets until tender (about 3-4 minutes). If using frozen broccoli, thaw it and squeeze out excess moisture. Once cooked, chop the broccoli into small, fine pieces.
  3. Mix Ingredients: In a large bowl, combine the finely chopped broccoli, shredded cheddar cheese, grated Parmesan cheese, and the egg. Mix well until everything is evenly combined.
  4. Add Dry Ingredients: Add the almond flour, garlic powder, onion powder, salt, pepper, and dried oregano (if using) to the bowl. Mix until the mixture comes together and is well combined. The almond flour helps bind the mixture and gives it a good texture.
