By deiv3 on July 29, 2024

Ingredients

  • 2 cups cooked chicken breast, diced
  • 1 cup celery, diced
  • ½ cup red bell pepper, diced
  • ¼ cup red onion, finely chopped
  • 1 cup mayonnaise (sugar-free)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Prepare Ingredients: Dice the cooked chicken breast, celery, red bell pepper, and red onion. Ensure all ingredients are uniformly chopped for even distribution.
  2. Make Dressing: In a large bowl, combine the  mayonnaise, Dijon mustard, lemon juice, garlic powder, onion powder, salt, and pepper. Mix until smooth and well combined.
  3. Combine  Salad: Add the diced chicken, celery, bell pepper, and red onion to the bowl with the dressing. Stir until all ingredients are evenly coated with the dressing.
  4. Season and Chill: Taste the salad and adjust seasoning if necessary. Chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
  5. Serve: Garnish with chopped fresh parsley if desired. Serve chilled.

Storage Methods

  • Refrigeration: Store the chicken salad in an airtight container in the refrigerator for up to 4 days. Stir well before serving again.
  • Freezing: It's not recommended to freeze chicken salad due to the mayonnaise-based dressing, which can separate upon thawing.

Variations

  • Avocado Chicken Salad: Add diced avocado for a creamy texture and additional healthy fats.
  • Bacon Ranch Chicken Salad: Mix in crumbled cooked bacon and use ranch dressing instead of the mayonnaise-mustard dressing.
  • Greek Chicken Salad: Add diced cucumber, Kalamata olives, and feta cheese. Use a lemon-oregano vinaigrette instead of the mayonnaise-based dressing.

Benefits of Ingredients

  • Chicken Breast: A lean source of protein, essential for muscle maintenance and overall health.
  • Celery: Low in carbs and calories, celery adds crunch and fiber to the salad.
  • Red Bell Pepper: High in vitamins A and C, antioxidants, and fiber, red bell pepper adds sweetness and nutrients.
  • Red Onion: Provides flavor and beneficial compounds like antioxidants and vitamins.
  • Mayonnaise: Choose a mayonnaise made with healthy fats, such as avocado oil, to keep the salad keto-friendly.
  • Dijon Mustard: Adds flavor and a slight tang without adding carbs.
  • Lemon Juice: Enhances flavor with a burst of freshness and vitamin C.
