Low-Point Garlic Cheese Fingers

Ingredients:

  • 2 low-carb tortillas of choice
  • 1/4 cup light butter or margarine (very soft)
  • 1 Tbsp minced garlic
  • 1 Tbsp chopped parsley
  • 1 cup reduced-fat mozzarella cheese, shredded

Directions:

  1. Prepare Garlic Butter Mixture: In a bowl, mix together the soft light butter, minced garlic, and chopped parsley until well combined.
  2. Assemble the Cheese Fingers:
    • Spread half of the garlic butter mixture evenly over one of the low-carb tortillas.
    • Sprinkle half of the shredded reduced-fat mozzarella cheese (about 1/2 cup) evenly over the buttered tortilla.
    • Place the second tortilla on top.
    • Repeat the process with the remaining garlic butter mixture and mozzarella cheese on the second tortilla.
  3. Cooking Method:
    • Preheat your air fryer to 375°F (190°C).
    • Place the assembled tortilla stack in the air fryer basket. Cook for about 5 minutes, until the tortillas are crisp and the cheese is melted.
    • Optionally, finish by placing them under the broiler for 2-3 minutes to get a golden brown crust.
  4. Serve: Remove from the air fryer or broiler and let them cool slightly. Slice into pieces and enjoy warm!
