Sabudana Waffle

You must have tried fried sabudana vada many times. They are crispy from outside and soft from inside, my absolute favourite. Since everyone started eating less fried food I used appam pan to make vada with very little oil. I also tried preparing them in air fryer with almost no oil. Recently I saw the new avatar of sabudana vada in waffle form 😀. I decided to give it a try and they turned out so crispy. I already prepared it twice. Believe me they are absolutely addictive and the best version of all vada's I prepare. Also, this recipe is vegan and gluten free. You can skip nuts if trying for nut free option.

Sabudana is also known as sago or tapioca. We can eat these during fasting (vrat) or when we are on special diet during holy days. You can find many vrat (farali) recipes on my website. I also prepare these when we don't want to eat our regular food and craving for something spicy and yummy. It is highly addictive, it never feels enough but because these are non fried, I am okay to indulge in it. It doesn't take long to cook and tastes amazing. We like to eat as a snacks or light supper. This recipe serves 4 people.

Preparation Time: 20 minutes

Cooking Time: 30 minutes

Ingredients:

1 cup sabudana/sago rinsed twice and soaked in just enough water for 4-5 hour
5-6 Medium size potato boiled and mashed
1/2 cup peanut roasted, skin removed and crushed (skip for nut free option)
4-5 green chili finely chopped
1 tsp ginger grated
1/2 tsp cumin seeds
10-12 curry leaves (if not making for faral)
Handful of chopper coriander (if not making for faral)
Salt to taste
Oil for cooking

Procedure

1. Wash and soak sabudana in water for 4-5 hours. Add enough water to cover sabudana. After 4-5 hours it should soak almost all water but not completely dry. If it's dry then sprinkle little water. For this recipe, you needs slightly soggy (wet) sabudana.

2. Roast peanuts, remove skin and crush. Mash or grate boiled potato. Finely chop green chilies and grate ginger.

3. In a mixing bowl, add soaked sabudana, mashed potato, crushed peanuts, chopped chilies, grated ginger, cumin seeds and salt. If you are not making it for vrat, you can also add curry leaves (break in small pieces before adding) and chopped coriander. Mix well. Make desired size flat patties/coin. Keep this aside.

4. Heat a waffle maker on high first. You can grease waffle make with oil. I rubbed little oil on both sides of the patty. When waffle maker is hot, add patty and close the lid. I was able to add 4 patties to my grill with waffle maker plate. Let it completely cook and brown from the top. Once ready, remove from the heat.

5. Serve immediately with yogurt, peanut chutney or green chutney on the side.

These are super addictive and everyone will eat more than usual. It is such a treat to eat as they are super delicious with crispy outside. A must try!
