Toasted Sandwiches

Sandwiches are something I have often for lunch. Rarely do I have a sandwich that isn't toasted. Honestly I can't remember how long ago I made a sandwich that wasn't toasted. Think the last sandwich was a cucumber sandwich, but I am not sure.

I will make a toasted sandwich out of just about anything. Leftover roast beef, pork, and if I can't find anything else chicken. It doesn't stop with leftover meat, it's anything I can find. Tomato and dill pickle, dill pickle and grated carrot, cold slaw and cheese, just about anything in the fridge. Lots I repeat, like green onion and sliced green peppers ( any colour of pepper I have used ). The 3 favorite ones are a Reuben, fried garlic sausage, and cheese and onion. With the cheese and onion I don't mean fried onion or just a little very thinly sliced onion. My onion is at least a quarter inch thick and lots of it. It's a sandwich I have at least 6 times a year, but only when I know I am not going to be near other people.

This sandwich was because I wanted a sandwich and when I looked in the fridge there was leftover pork steak in mushroom gravy. Making it into a sandwich just was a why not thing. Shredding it was just what I thought was a natural thing to do. Leftover pork doesn't shred well right out of the fridge, you need to warm it up in the microwave. Once it's shredded mix it with the gravy and heat it in the microwave for the sandwich. With any sandwich I have found, with the hundreds I have made over the years, you salt and pepper the toast not what you're putting in it. Was it a good sandwich, yes a great sandwich. When I have leftover pork steak in mushroom gravy I will make it again.
