Tomatoes, basil, and cheese..... I could stop right there and that would be enough, wouldn't it? It is such a classic combination that blends so perfectly together. Not only the flavors, but they just look so good together. A huge perk to this dish is that it is not only easy to make, but it looks impressive.
My "go to" cheese is usually mozzarella, but I decided to change it up a bit and use burrata. I had seen the addition of peaches to this dish in some restaurants and was curious about how that flavor would meld. Well, it melds! The balsamic glaze really adds to the peaches nicely. Such a yummy flavor combination.
If you aren't familiar with burrata, it has a mozzarella shell that is filled with a soft curd and cream mixture. Whereas mozzarella can be sliced, burrata is a spreadable cheese. They're both delicious!
Ingredients:
Pint of grape tomatoes, halved
Basil, chopped
1/2 tsp minced garlic
2 tbsp olive oil
2 peaches, sliced
1 burrata ball
Balsamic glaze
Salt and pepper, to taste
Combine the cherry tomatoes, basil, garlic, salt, pepper, and olive oil in a medium bowl.
I like to let it sit for about 1/2 hour if possible so the tomatoes can absorb the oil.
On a platter spread the sliced peaches around the burrata. Add the tomato mixture on and around the peaches. Top the burrata with a tiny drizzle of olive oil, along with some salt and pepper. Drizzle balsamic glaze over all of the ingredients. I love balsamic glaze so I like to use a considerable amount. That's it!
Serve with crostini or soft bread. So delicious!
While I am more of a soft bread person, crostini is also very easy to make. Use a crustier baguette and brush the slices with a little olive oil. Place the slices on a baking sheet and bake at 400 degrees for about 10-12 minutes or until golden brown.
