First, the meat was mari… Read on blog or Reader GIVE ME THIS DAY Read on blog or Reader 15.224 Chipotle Fried Chicken Burgers By katch4246 on 16 August 2024 Cycle 15 - Item 224 16 (Fri) August 2024 Chipotle Fried Chicken Burgers 3.5 by me at home -Changgok, Sujeong, Seongnam, Gyeonggi, Republic of Korea- with IZ Improvised with leftovers from a bucket of fried chicken. Skins peeled off, meat shredded, bones discarded.  First, the meat was marinated then lightly sautéed in butter, just enough to warm. The skins were pan-fried in oil until crispy, drizzled with salt. Cole slaw had been prepared hours earlier. La Costeña Chipotle Peppers in Adobo Sauce (see also 15.200 Pulled Pork Tacos with Hand-Made Tortillas), enhanced with garlic + hot sauce + cilantro. Excellent.  The meat was tender and flavorful.  The cole slaw added brightness and crunch.  But the kicker was the skin, which was super crispy and savory.  If I may, the burgers looked and tasted professional.
