I am making chicken quesadillas for supper tonight. Since it is kind of a boring afternoon, I looked at some recipes. Honestly I can't ever remember looking at quesadilla recipes before, I have just made them my way. To me they were just something I kind of knew how to make after eating one. Like most of my cooking the kiss rule ( keep it simple stupid) comes into play. Most good food should never be complicated when it isn't necessary.
Looking at the recipes I was totally shocked. Most recipes had 12 to 20 ingredients and some were kind of unnecessarily complicated. Mine, if you include the tortilla, salt and pepper has 7 ingredients. I have only had a quesadilla in a restaurant once, my wife orders them all the time. She says, which amazes me, that she hasn't had one as good as I make.
When I looked at the recipes today all of the extra ingredients are found in 1 product you most likely have in the fridge. A jar of good salsa is the thing that makes a quesadilla simple. It's what I have used from the time I first made one. The first one I made was because wife had a quesadilla in a restaurant in Calgary and about a month later asked me to make them. This recipe makes 2 full size quesadillas, I don't do the fold in half method.
The green onions flavour the salsa and everything flavours the chicken when you let it marinate together.
1 flattened large chicken breast
4 chopped green onions
3 heaping soup spoons of salsa
Salt and pepper
3 cups grated cheese, it's the cheese of your choice. Old cheddar is mine
4 tortillas
This is where very good non-stick frying pans get used. Put the salsa in a small bowl, add the green onions. Mix well and set aside. Preheat a small non-stick frying pan on medium heat. Salt and pepper both sides of the chicken breast, place in frying pan and cover. Cook for 4 minutes, turn over and cook for an additional 4 minutes. Remove from the pan and let cool completely. When cool cut into small pieces and mix well into the salsa and onions, refrigerate for 2 hours.
To make the quesadilla preheat a large non-stick frying pan on medium low heat. Place a tortilla in the pan, add 1/4 of the cheese. Spread 1/2 of the chicken mixture evenly over the cheese then add another 1/4 of the cheese on top. Place another tortilla on top and press down gently. When the bottom tortilla is browned to how you like it turn the quesadilla over. Cook until the tortilla is browned, remove and cut into wedges and serve.
